Snake aubergines with cottage cheese
Ingredients
for 2 person
| 300 g | snake aubergines, halved lengthwise |
| 125 g | cherry tomatoes |
| 2 | garlic cloves, squeezed |
| 2 tbsp | olive oil |
| ½ tsp | salt |
| a little | pepper |
| 2 tbsp | pine nuts, roasted |
| 200 g | plain cottage cheese |
How it's done
Aubergines
Place the aubergines and all the other ingredients up to and including the pepper on a baking tray lined with baking paper, mix, spread out.
Bake
Approx. 20 mins. in the upper half of an oven preheated to 220 °C.
Serve
Serve the vegetables on a platter, sprinkle with the pine nuts, serve with the cottage cheese.
