Drømmekage (coconut cake)
Ingredients
for 12 pieces
| 1 dl | milk |
| 80 g | butter, cut into pieces |
| 100 g | full-cane sugar |
| 1 pinch | salt |
| 100 g | coconut flakes |
| 1 ½ dl | milk |
| 50 g | butter, cut into pieces |
| 1 | vanilla pod, halved lengthwise, seeds scraped out |
| 2 | eggs |
| 100 g | sugar |
| 200 g | white flour |
| 2 tsp | baking powder |
How it's done
Coconut mixture
Whisk the milk, butter, sugar and salt in a pan, bring to the boil over a medium heat, stirring constantly. Remove the pan from the heat, add the coconut flakes, mix, set aside.
Cake mixture
Place the milk, butter and vanilla in a pan, bring to the boil, stirring occasionally with a whisk. Remove the pan from the heat, allow to cool slightly, remove the vanilla pod. Whisk the eggs and sugar in a bowl. Slowly and steadily whisk in the milk. Combine the flour and baking powder, mix in. Transfer the cake mixture to the prepared tin.
Bake
Approx. 15 mins. in the centre of an oven preheated to 200 °C. Remove, spread the reserved coconut mixture evenly over the cake.
Return to the oven
Bake for a further 15 mins. in the centre of the oven.
