White chocolate and cranberry cookies
Ingredients
for 8 pieces
| 80 g | butter, cut into pieces |
| 50 g | coarse cane sugar |
| 50 g | sugar |
| 1 | egg |
| 150 g | white flour |
| 1 pinch | salt |
| ½ tsp | baking powder |
| ½ tsp | sodium bicarbonate |
| 100 g | white chocolate, coarsely chopped |
| 80 g | dried cranberries |
How it's done
Dough
Melt the butter in a pan until it foams and smells slightly nutty. Remove the pan from the heat, allow to cool slightly. Mix the cane sugar, sugar and egg in a bowl. Pour in the butter, beat using the whisk on a mixer until the mixture becomes lighter in colour. Mix the flour with all the other ingredients up to and including the cranberries, stir into the mixture, mix quickly to form a soft dough – do not knead. Shape the dough into approx. 8 balls. Place on a baking tray lined with baking paper, leaving plenty of room between each ball.
Bake
Approx. 15 mins. in the centre of an oven preheated to 180 °C. Remove from the oven, allow to cool slightly, leave to cool completely on a rack.
