Vegan burfi

Almond burfi is a traditional Indian sweet that finishes off a meal perfectly and goes well with a coffee. Traditionally, it is made with condensed milk, however this recipe uses ground almonds and coconut oil instead. It is very quick to make. All you need is a pan. Burfi is a tasty treat to offer guests with a hot drink.

Ingredients

for 12 pieces

100 g sugar
½ dl water
saffron threads
170 g shelled ground almonds
1 tsp coconut oil
2 pinch salt
2 tbsp unsalted, chopped pistachios

How it's done

Place the sugar, water and saffron in a pan, bring to the boil and boil fast for approx. 2 mins. Remove the pan from the heat, add the almonds, oil and salt, mix. Transfer the mixture to the prepared loaf tin, sprinkle with the pistachios, press the mixture down firmly with the back of a spoon. Cover and chill for at least 30 mins. Carefully remove the burfi from the tin, cut into pieces with a sharp knife.
