Spring will soon be upon us once more and with it the season for fresh salads. This salad dressing will make any salad shine. The avocado makes this dressing wonderfully creamy, while the sour cream gives it a slight acidity.

Ingredients

for 2 dl

ripe avocado, cut into pieces
lemon, the whole juice
½ dl vegetable bouillon
½ dl olive oil
4 tbsp sour single cream
  salt and pepper to taste

How it's done

Place the avocado, lemon juice, stock, oil and sour single cream in a measuring cup, puree until smooth, season. Transfer the salad dressing to a clean jar, chill.
