Chocolate and pistachio cookies
Ingredients
for 8 pieces
75 g | coconut oil, soft |
1 tbsp | water |
100 g | sugar |
1 parcel | vanilla sugar |
125 g | half-white flour |
¼ tsp | baking powder |
¼ tsp | sodium bicarbonate |
100 g | vegan dark chocolate, coarsely chopped |
50 g | salted, roasted pistachios, coarsely chopped |
How it's done
Dough
Using the whisk on a mixer, whisk the coconut oil, water, sugar and vanilla sugar in a bowl until light and creamy. Combine the flour with all the other ingredients up to and including the pistachios, mix in. Shape the dough into approx. 8 balls. Place on a baking tray lined with baking paper, leaving plenty of room between each ball.
Bake
Approx. 15 mins. in the centre of an oven preheated to 180 °C. Remove from the oven, allow to cool slightly, leave to cool completely on a rack.
