Chocolate and pistachio cookies

Ingredients

for 8 pieces

Dough
75 g coconut oil, soft
1 tbsp water
100 g sugar
1 parcel vanilla sugar
125 g half-white flour
¼ tsp baking powder
¼ tsp sodium bicarbonate
100 g vegan dark chocolate, coarsely chopped
50 g salted, roasted pistachios, coarsely chopped

How it's done

Dough

Using the whisk on a mixer, whisk the coconut oil, water, sugar and vanilla sugar in a bowl until light and creamy. Combine the flour with all the other ingredients up to and including the pistachios, mix in. Shape the dough into approx. 8 balls. Place on a baking tray lined with baking paper, leaving plenty of room between each ball.

Bake

Approx. 15 mins. in the centre of an oven preheated to 180 °C. Remove from the oven, allow to cool slightly, leave to cool completely on a rack.
