Cod with cucumber raita
Ingredients
for 4 person
| 1 | cucumber, halved lengthwise, deseeded, cut into fine strips |
| 300 g | plain greek yoghurt |
| 30 g | ginger, finely grated |
| 3 sprig | peppermint, finely chopped |
| ½ tsp | ground cumin |
| ½ tsp | Madras curry powder |
| ½ tsp | chilli powder |
| ½ tsp | salt |
| a little | pepper |
| 3 tbsp | Maizena cornflour |
| 1 ½ tsp | Madras curry powder |
| ½ tsp | salt |
| 4 | Royal cod fillets (MSC) (each approx. 150 g) |
| 2 tbsp | olive oil |
| 4 | naan breads |
How it's done
Cucumber raita
In a bowl, mix the cucumber with all the other ingredients up to and including the pepper.
Fish
Mix the cornflour, curry and salt in a shallow dish, toss the fish fillets in the mixture. Heat the oil in a non-stick frying pan. Fry the fish for approx. 3 mins. on each side. Serve the fish fillets with the raita and naan bread.
