Cod with cucumber raita

Ingredients

for 4 person

Cucumber raita
cucumber, halved lengthwise, deseeded, cut into fine strips
300 g plain greek yoghurt
30 g ginger, finely grated
3 sprig peppermint, finely chopped
½ tsp ground cumin
½ tsp Madras curry powder
½ tsp chilli powder
½ tsp salt
a little  pepper
Fish
3 tbsp Maizena cornflour
1 ½ tsp Madras curry powder
½ tsp salt
Royal cod fillets (MSC) (each approx. 150 g)
2 tbsp olive oil
naan breads

How it's done

Cucumber raita

In a bowl, mix the cucumber with all the other ingredients up to and including the pepper.

Fish

Mix the cornflour, curry and salt in a shallow dish, toss the fish fillets in the mixture. Heat the oil in a non-stick frying pan. Fry the fish for approx. 3 mins. on each side. Serve the fish fillets with the raita and naan bread.
