Tacos with barbecued tofu
Ingredients
for 8 pieces
| 2 tbsp | peanut cream |
| 10 g | ginger, finely grated |
| 1 tbsp | soy sauce |
| 1 | garlic clove, squeezed |
| 1 | organic lime, grated zest and the juice |
| 1 tbsp | olive oil |
| ¼ tsp | salt |
| 400 g | smoked tofu, cut into slices approx. 2 cm thick |
| 1 | ripe avocado, cut into pieces |
| 1 tsp | lime juice |
| ¼ tsp | salt |
| a little | pepper |
| 8 | taco shells |
| 2 | tomatoes, cut into cubes |
| 1 | red onion, cut into thin rings |
How it's done
Tofu
In a bowl, mix the peanut butter with all the other ingredients up to and including the salt. Brush the tofu slices with half of the marinade, set aside the remainder of the marinade.
Charcoal/gas/electric grill
With the lid down, grill the tofu over/on a medium heat (approx. 200 °C) for approx. 4 mins. on each side. Cut the slices of tofu into approx. 2 cm cubes, place in the reserved marinade, mix.
Tacos
Finely mash the avocado flesh with a fork. Immediately mix in the lime juice, season, spread inside the tacos. Top with the tomatoes, onion and tofu.
