Linguine with kohlrabi sauce
Ingredients
for 4 person
| 400 g | pasta (e.g. Linguine) |
| salted water, boiling |
| 1 tbsp | olive oil |
| 1 | garlic clove, squeezed |
| 250 g | kohlrabi, cut into sticks approx. 1 cm thick |
| 80 g | dried tomatoes, coarsely chopped |
| ¾ tsp | salt |
| 200 g | crème fraîche |
| 1 tsp | ground coriander seeds |
| a little | pepper |
| ½ bunch | basil, leaves torn off |
| ½ tsp | chilli flakes |
How it's done
Pasta
Cook the pasta in boiling salted water until al dente, set aside 200 ml of the cooking water, drain the pasta.
Sauce
Heat the oil in a wide pan. Add the garlic, kohlrabi and tomatoes, season with salt, cover and cook over a low heat for approx. 15 mins., stirring occasionally. Add the crème fraîche, coriander seeds, pasta and reserved cooking water, bring to the boil, season.
Serve
Mix the basil in with the pasta, plate up, sprinkle with the chilli flakes.
