Pulled chicken burgers
Ingredients
for 4 person
| 1 | cucumber, halved lengthwise, deseeded, roughly grated |
| ¼ tsp | salt |
| 150 g | plain greek yoghurt |
| 1 | garlic clove, squeezed |
| ½ tbsp | olive oil |
| a little | pepper |
| 4 | chicken breasts (each approx. 120 g) |
| 1 tbsp | olive oil |
| ½ tsp | salt |
| 4 | bread rolls, halved lengthwise |
| 100 g | BBQ sauce |
| 1 | baby lettuce, leaves removed |
| 1 | tomato, in slices |
| 1 | red onion, cut into thin rings |
How it's done
Tzatziki
Mix the cucumber and salt in a sieve, leave to absorb for approx. 20 mins. Squeeze out the cucumber well, place in a small bowl. Add the yoghurt, garlic and oil, mix, season the tzatziki, set aside.
Chicken
Brush the chicken breasts with oil, season with salt.
Charcoal/gas/electric grill
Grill the chicken breasts over/on a medium heat (approx. 200 °C) for approx. 7 mins. on each side. Briefly toast the bread rolls (cut side down) alongside. Place the chicken breasts in a bowl, pull apart using two forks. Add the BBQ sauce, mix.
Burgers
Spread the tzatziki over the bottom half of each bun, add the lettuce, tomato, onion and chicken, cover with the top half of the bun.
