Barbecued chicken with coriander sauce
Ingredients
for 4 person
| 2 tbsp | mustard |
| 2 tbsp | olive oil |
| 1 tsp | ground coriander seeds |
| 1 tsp | mild paprika |
| 1 tsp | salt |
| a little | pepper |
| 1 | chicken (approx. 1.2 kg) |
| 2 bunch | coriander, leaves torn off |
| ½ bunch | peppermint, leaves torn off |
| 2 | garlic cloves |
| 2 tbsp | olive oil |
| 2 | limes, rinsed with hot water, dabbed dry, use grated zest and juice |
| 1 | green chilli, deseeded, cut into pieces |
| ¼ tsp | salt |
| a little | pepper |
How it's done
Chicken
Mix the mustard with all the other ingredients up to and including the pepper. Pat the chicken dry. Remove the backbones from the chicken and flatten from the breast side, brush with half of the marinade.
Charcoal/gas/electric grill
With the lid down, grill the chicken over/on a medium heat (approx. 200 °C) for approx. 30 mins., turning occasionally and brushing the chicken with the remainder of the marinade towards the end of the cooking time.
Coriander sauce
Place the coriander and all the other ingredients in a measuring cup, puree. Serve the chicken with the coriander sauce.
