Kale salad with apple

Kale has made a comeback in the last few years. Most of us are familiar with oven-baked kale crisps. But kale can also be eaten as a salad, adding a bit of colour to our plates in winter.

Ingredients

for 4 person

Kale
2 tbsp apple vinegar
1 tbsp lemon juice
4 tbsp rapeseed oil
1 tsp liquid honey
½ tsp salt
a little  pepper
150 g washed, prepared kale
apples, thinly sliced
red onion, cut into strips
2 tbsp light sultanas
Winter radish
450 g radishes, cut into cubes
1 tbsp rapeseed oil
¼ tsp salt
To bake
2 tbsp walnut kernels, coarsely chopped

How it's done

Kale

Whisk the vinegar, lemon juice, oil and honey in a bowl, season. Mix in the kale, apples, onion and sultanas, cover and refrigerate for approx. 30 mins.

Winter radish

Mix the radish with the oil and salt, spread on a baking tray lined with baking paper.

To bake

Approx. 15 mins. in the centre of an oven preheated to 200 °C. Sprinkle the nuts on top, bake for a further 10 mins. Mix the radish in with the kale, plate up.
