Kale salad with apple
Ingredients
for 4 person
| 2 tbsp | apple vinegar |
| 1 tbsp | lemon juice |
| 4 tbsp | rapeseed oil |
| 1 tsp | liquid honey |
| ½ tsp | salt |
| a little | pepper |
| 150 g | washed, prepared kale |
| 2 | apples, thinly sliced |
| 1 | red onion, cut into strips |
| 2 tbsp | light sultanas |
| 450 g | radishes, cut into cubes |
| 1 tbsp | rapeseed oil |
| ¼ tsp | salt |
| 2 tbsp | walnut kernels, coarsely chopped |
How it's done
Kale
Whisk the vinegar, lemon juice, oil and honey in a bowl, season. Mix in the kale, apples, onion and sultanas, cover and refrigerate for approx. 30 mins.
Winter radish
Mix the radish with the oil and salt, spread on a baking tray lined with baking paper.
To bake
Approx. 15 mins. in the centre of an oven preheated to 200 °C. Sprinkle the nuts on top, bake for a further 10 mins. Mix the radish in with the kale, plate up.
