Baked apples with a vegan granola filling

This recipe combines all the best winter aromas: apples, oats, spices, raisins and maple syrup! It is quick and easy to make and is perfect as a healthy dessert or even as a warming winter breakfast.

Ingredients

100 g rolled oats
50 g pecan nuts, coarsely chopped
2 tbsp raisins
2 tbsp maple syrup
2 tbsp coconut oil, melted
1 tsp cinnamon
½ tsp ginger powder
½ tsp nutmeg
1 pinch ground cloves
1 pinch salt
1 ¼ dl apple juice

How it's done

Apples

Slice a lid approx. 1 cm thick off the top of each apple, set aside. Remove the core and some of the flesh using a melon baller. Transfer the apples to the prepared dish.

Filling

In a bowl, mix the oats with all the other ingredients up to and including the salt. Spoon the mixture into the apples. Place the lids on top, pressing down gently. Pour the apple juice into the dish and cover with foil.

To bake

Approx. 25 mins. in the centre of an oven preheated to 180 °C. Remove the foil and cook for a further 5 mins.
