Ingredients

for 4 person

Bread mixture
250 g halloumi, cut into approx. 1 cm cubes
250 g Medjool dates, pitted, quartered
250 g white bread, cut into approx. 2 cm cubes
2 tbsp olive oil
½ tbsp Za'atar (spice mix)
½ tsp salt
Lemon vinaigrette
4 tbsp white balsamic vinegar
2 tbsp olive oil
organic lemon, use grated zest
4 sprig thyme, leaves torn off
¼ tsp salt

How it's done

Bread mixture

Mix the halloumi, dates, bread cubes and oil in a bowl, season. Transfer everything to a baking tray lined with baking paper.

Bake

Approx. 25 mins. in the centre of an oven preheated to 200 °C. Remove.

Lemon vinaigrette

In a bowl, mix the balsamic with all the other ingredients up to and including the salt. Add the bread mixture, mix, serve the bread salad warm.
