Warm date and bread salad
Ingredients
for 4 person
250 g | halloumi, cut into approx. 1 cm cubes |
250 g | Medjool dates, pitted, quartered |
250 g | white bread, cut into approx. 2 cm cubes |
2 tbsp | olive oil |
½ tbsp | Za'atar (spice mix) |
½ tsp | salt |
4 tbsp | white balsamic vinegar |
2 tbsp | olive oil |
1 | organic lemon, use grated zest |
4 sprig | thyme, leaves torn off |
¼ tsp | salt |
How it's done
Bread mixture
Mix the halloumi, dates, bread cubes and oil in a bowl, season. Transfer everything to a baking tray lined with baking paper.
Bake
Approx. 25 mins. in the centre of an oven preheated to 200 °C. Remove.
Lemon vinaigrette
In a bowl, mix the balsamic with all the other ingredients up to and including the salt. Add the bread mixture, mix, serve the bread salad warm.
