Chocolate powder mousse

Ingredients

for 4 person

Mousse
fresh egg yolks
1 ½ tbsp sugar
6 tbsp chocolate powder (e.g. Ovomaltine)
fresh egg whites
1 pinch salt
2 ½ dl full cream, beaten until stiff
Decorate
a little  chocolate powder (e.g. Ovomaltine)

How it's done

Mousse

In a bowl, beat the egg yolks and sugar using the whisk on a mixer for approx. 5 mins. until the mixture is light and fluffy. Mix the chocolate powder into the egg mixture. Beat the egg whites with the salt until stiff. Carefully fold the beaten egg whites and 200 ml of whipped cream into the chocolate in layers, divide into glasses, cover and chill for approx. 2 hrs. Chill the remainder of the whipped cream.

Decorate

Decorate the mousse with the remainder of the whipped cream, sprinkle with chocolate powder.
