Salmon with soba noodles
Ingredients
for 4 person
300 g | dried soba noodles |
salted water, boiling |
1 tbsp | sesame oil |
2 | garlic cloves, sliced |
½ dl | Teriyaki sauce |
1 dl | water |
½ tbsp | sugar |
2 | spring onions incl. green parts, cut into thin slices |
½ | red chilli pepper, cut into rings |
¾ tsp | salt |
1 tbsp | sesame oil |
4 slice | salmon fillets without skin (each approx. 150 g) |
½ tsp | salt |
5 | radishes, very thinly sliced |
2 | nori sheets, roughly chopped |
How it's done
Soba noodles
Cook the noodles as per the packet instructions, rinse in cold water, drain.
Sauce
Heat the oil in a pan. Sauté the garlic for approx. 2 mins. Pour in the teriyaki sauce and water, add the sugar, bring to the boil. Add the noodles, spring onions and chilli pepper to the sauce, heat through, season with salt.
Fish
Heat the oil in a non-stick frying pan. Salt the fish fillets, fry for approx. 3 mins. on each side. Remove, roughly pull apart with 2 forks, serve with the noodles. Garnish with the radishes and nori.
