Baked za'atar eggs

Ingredients

Bread rolls
ready-to-bake croissants
Filling
75 g cream cheese with herbs
2 tbsp water
1 tbsp olive oil
50 g baby spinach, finely chopped
1 tbsp Za'atar (spice mix)
eggs
To bake
80 g Irish smoked salmon in slices

How it's done

Bread rolls

Press the insides of the croissants outwards a little to create a hollow. Place the croissants on a baking tray lined with baking paper.

Filling

Combine the cream cheese, water and oil. Add the spinach and za'atar, mix, use to fill the croissants. Make a well using a tablespoon. Crack the eggs one at a time, carefully sliding them into the wells.

To bake

Approx. 20 mins. in the centre of an oven preheated to 180 °C. Remove, top with the salmon.
