Super-quick vegan Christmas biscuits with oats

If you're anything like me, you'll sometimes polish off all of your Christmas biscuits before Christmas! I have an emergency plan for just such an occasion and have come up with a biscuit recipe that can be whipped up in a flash on Christmas Day. Added bonus: when your guests arrive, the wonderful smell of cinnamon and Christmas will be in the air!

Ingredients

for 12 pieces

Dough
120 g fine whole-grain rolled oats
10 g Maizena cornflour
2 tsp cinnamon
1 pinch salt
150 g peanut butter, melted, left to cool
1 dl maple syrup

How it's done

Dough

Blitz the oats in a food processor. Add the cornflour, cinnamon and salt, blitz briefly. Add the peanut butter and maple syrup, combine to form a dough. Divide the dough into 12 portions, shape into balls and place on a baking tray lined with baking paper. Flatten the balls with a fork.

Bake

Approx. 15 mins. in an oven preheated to 180 °C (convection). Remove from the oven, allow to cool slightly on the tray, transfer to a cooling rack and leave to cool completely.
