Radish soup

In my opinion, the radish is an often underestimated vegetable. To prove this, I have used it to create a delicious radish soup.

Ingredients

for 4 person

Soup
1 tbsp olive oil
onion, coarsely chopped
600 g radishes, peeled, chopped
300 g mealy potatoes, peeled, chopped
1 dl apple juice
8 dl water
1 ½ tsp salt
a little  pepper
To serve
1 dl full cream
2 cm horseradish, finely grated
30 g bread sticks, roughly broken into pieces

How it's done

Soup

Heat the oil in a wide pan. Sauté the onion for approx. 3 mins. Add the radishes and potatoes, cook briefly. Pour in the apple juice and water, bring to the boil. Reduce the heat, season with salt, simmer for approx. 20 mins. Blend the soup, season.

To serve

Beat the cream with the horseradish until fluffy. Serve the soup in bowls or deep dishes, top with the cream and bread sticks.
