Radish soup
Ingredients
for 4 person
1 tbsp | olive oil |
1 | onion, coarsely chopped |
600 g | radishes, peeled, chopped |
300 g | mealy potatoes, peeled, chopped |
1 dl | apple juice |
8 dl | water |
1 ½ tsp | salt |
a little | pepper |
1 dl | full cream |
2 cm | horseradish, finely grated |
30 g | bread sticks, roughly broken into pieces |
How it's done
Soup
Heat the oil in a wide pan. Sauté the onion for approx. 3 mins. Add the radishes and potatoes, cook briefly. Pour in the apple juice and water, bring to the boil. Reduce the heat, season with salt, simmer for approx. 20 mins. Blend the soup, season.
To serve
Beat the cream with the horseradish until fluffy. Serve the soup in bowls or deep dishes, top with the cream and bread sticks.
