Pear and sweetcorn soup with feta

Ingredients

for 2 person

Soup
1 tbsp butter
onion, finely chopped
1 tin corn kernels (approx. 280 g), rinsed, drained
½  pear, cut into pieces
4 dl vegetable bouillon
100 g feta, cut into pieces
  salt and pepper to taste
Serve
½  pear, cut lengthwise into slices
2 tbsp fried onions

How it's done

Soup

Heat the butter in a pan. Add the onion, sauté for approx. 3 mins. Add the sweetcorn and pear, cook for approx. 2 mins. Pour in the stock, bring to the boil, reduce the heat, cover and simmer for approx 5 mins. until soft. Add the feta, puree, season the soup.

Serve

Plate up the soup, top with the pear and fried onions.
