Ingredients

for 4 person

Sauce
400 g puréed tomatoes
red chilli, finely chopped
garlic clove, squeezed
1 tsp ground cumin
1 tsp ground coriander seeds
Chilli sin carne
1 tin borlotti beans (approx. 400 g), rinsed, drained
1 tin corn kernels (approx. 280 g), rinsed, drained
200 g tomatoes, cut into cubes
lime juice, the whole juice
½ tsp salt
a little  pepper
Serve
100 g tomatoes, cut into wedges
3 sprig coriander, leaves torn off

How it's done

Sauce

In a bowl, combine the tomatoes with all the other ingredients up to and including the ground coriander seeds.

Chilli sin carne

Add the beans, sweetcorn, tomatoes and lime juice, mix, season.

Serve

Plate up the chilli sin carne, top with the tomatoes. Garnish with the coriander.
