Greek anchovies
Ingredients
for 4 person
| 2 | tomatoes, cut into cubes |
| 400 g | anchovies, ready to cook |
| 1 | garlic clove, sliced |
| 1 | bay leaf |
| 4 sprig | oregano |
| ½ dl | olive oil |
| ½ dl | white wine |
| ½ tsp | salt |
| a little | pepper |
| 1 | organic lemon, grated zest and the juice |
| 2 tbsp | breadcrumbs, roasted |
How it's done
Anchovies
Place half of the tomatoes in the prepared dish, top with the anchovies. Spread the remainder of the tomatoes, garlic, bay leaf and oregano on top of the fish. Mix the oil and wine, season, pour on top of the anchovies.
Bake
Approx. 15 mins. in the upper half of an oven preheated to 220 °C. Remove, top the anchovies with the lemon zest and juice, sprinkle with the breadcrumbs.
