Mediterranean-style octopus
Ingredients
for 4 person
| 1 tbsp | olive oil |
| 300 g | pre-cooked octopus tentacles |
| 3 tbsp | red wine vinegar |
| ½ tsp | ground cumin |
| ½ tsp | salt |
| a little | pepper |
| 1 tbsp | olive oil |
| 500 g | cherry tomatoes |
| 2 | garlic cloves, sliced |
| ½ tsp | salt |
| 4 sprig | oregano, leaves torn off |
| ½ | organic lemon, cut into wedges |
How it's done
Octopus
Heat the oil in a non-stick frying pan. Add the octopus, fry for approx. 3 mins. on each side. Add the vinegar and cumin, reduce completely, season, remove.
Tomatoes
Heat the oil in the same pan. Reduce the heat, add the tomatoes, stir fry for approx. 6 mins., add the garlic, fry for approx. 2 mins., season with salt. Arrange the tomatoes on a platter, top with the octopus, sprinkle with oregano. Serve with lemon wedges.
