Tacos with beef and Cheddar

Ingredients

for 4 person

Onion
½ dl red wine vinegar
½ dl water
½ tbsp sugar
cloves
2 pinch salt
red onion, cut into thin slices
Meat
  oil for frying
300 g minced meat (beef)
1 tsp smoked paprika
½ tsp ground cumin
¼ tsp salt
Cheddar sauce
1 tbsp butter
1 tbsp white flour
2 dl milk
100 g Cheddar, grated
a little  pepper
Tacos
2 sprig oregano, leaves torn off
8 piece taco shells

How it's done

Onion

Pour the vinegar into a pan along with all the other ingredients up to and including the salt, bring to the boil. Remove the pan from the heat. Add the onion, mix, cover and leave to pickle for at least 10 mins.

Meat

Heat the oil in a frying pan. Add the meat, fry for approx. 4 mins., season. Remove, keep the meat warm.

Cheddar sauce

Heat the butter in a pan. Add the flour, cook over a medium heat while stirring with a whisk; the flour must not take on any colour. Pour in all of the milk at once, bring to the boil while stirring, reduce the heat, simmer for approx. 10 mins., stirring occasionally until the sauce is thick and creamy. Stir in the cheese and season.

Tacos

Fill the tacos with the meat, Cheddar sauce and onion, sprinkle with the oregano.
