Open sandwiches with ajvar and trout

Ingredients

for 4 person

Open sandwiches
300 g brown bread, cut into 8 slices
300 g Ajvar (pepper spread)
125 g smoked trout filets, torn into pieces
hard-boiled eggs, quartered
nectarines, in slices
a little  sea salt
a little  pepper
2 tbsp sour single cream
20 g beetroot shoots

How it's done

Open sandwiches

Spread the ajvar on top of the slices of bread, arrange on a platter. Top with the trout, eggs and nectarines, season. Drizzle with the sour single cream, garnish with the beetroot sprouts.
