Tomato salad with sambal
Ingredients
for 4 person
| 1 tbsp | olive oil |
| 1 | red onion, finely chopped |
| ½ tsp | mustard seeds |
| 400 g | vine-ripened tomatoes, cut into cubes |
| 2 tbsp | apple vinegar |
| 1 tbsp | cane sugar |
| 1 | red chilli, finely chopped |
| ½ tsp | nutmeg |
| ½ tsp | cinnamon |
| ½ tsp | salt |
| 750 g | tomatoes *-* |
| 250 g | smoked scamorza , cut into pieces |
| 1 ½ tbsp | olive oil |
| ½ tsp | sea salt |
| 3 sprig | basil, leaves torn off |
How it's done
Tomato sambal
Heat the oil in a small pan. Add the onion and mustard seeds, sauté for approx. 5 mins. Add the tomatoes, vinegar, sugar and chilli, simmer uncovered for approx. 5 mins., season, leave to cool.
Serve
Arrange the tomatoes and cheese on a platter, drizzle with the oil, season with salt. Garnish the salad with the sambal and basil.
