Vegan omelettes

Already as a child, omelettes were Joel's favourite meal. One time he even invited his whole family to an omelette party! This new recipe replaces the eggs with bananas – the advantage of this being that we can also leave out the sugar and the omelettes will still be sweet and fluffy.

Ingredients

for 4 person

Batter
bananas, cut into pieces
6 dl oat drink
250 g white flour
3 pinch salt
Fry
  margarine for frying

How it's done

Batter

Preheat the oven to 60 °C, warm the platter and plates. Puree the bananas with the oat milk. Mix the flour and salt in a bowl, create a well in the middle. Gradually pour the banana and oat milk into the well while mixing with a whisk, continue to whisk until the batter is smooth.

Fry

Heat a little margarine in a non-stick frying pan. Pour enough batter (approx. 3 tbsp) into the pan to thinly cover the base. Reduce the heat. Once the underside is cooked and separates from the pan, turn the omelettes, finish cooking and then keep warm. Repeat these steps with the remainder of the batter.
