Green summer salad

Ingredients

for 4 person

Salad
1 tsp mustard
2 ½ tbsp white balsamic vinegar
4 tbsp olive oil
1 tsp liquid honey
¼ tsp salt
a little  pepper
200 g courgettes *-*
250 g mini cucumbers *-*
50 g baby spinach
50 g rocket
125 g blueberries
Serve
100 g feta, crumbled
50 g hazelnuts, roasted, coarsely chopped

How it's done

Salad

Whisk the mustard, balsamic, oil and honey in a bowl, season. Add the courgettes and all the other ingredients up to and including the blueberries, mix.

Serve

Plate up the salad, top with the feta and hazelnuts.
