Green summer salad
Ingredients
for 4 person
| 1 tsp | mustard |
| 2 ½ tbsp | white balsamic vinegar |
| 4 tbsp | olive oil |
| 1 tsp | liquid honey |
| ¼ tsp | salt |
| a little | pepper |
| 200 g | courgettes *-* |
| 250 g | mini cucumbers *-* |
| 50 g | baby spinach |
| 50 g | rocket |
| 125 g | blueberries |
| 100 g | feta, crumbled |
| 50 g | hazelnuts, roasted, coarsely chopped |
How it's done
Salad
Whisk the mustard, balsamic, oil and honey in a bowl, season. Add the courgettes and all the other ingredients up to and including the blueberries, mix.
Serve
Plate up the salad, top with the feta and hazelnuts.
