Açai Bircher muesli
Ingredients
for 4 person
| 80 g | fine whole-grain rolled oats |
| 360 g | plain yoghurt |
| 100 g | frozen organic açai puree, defrosted |
| 2 tbsp | sugar |
| 1 | red-skinned apple deseeded, coarsely grated |
| 1 | pear deseeded, coarsely grated |
| 1 | organic lemon, use a little grated zest |
| 30 g | sugar |
| 1 tbsp | water |
| 30 g | hazelnuts |
| 1 pinch | salt |
| 50 g | dark chocolate, coarsely chopped |
How it's done
Bircher muesli
Mix the oats with all the other ingredients up to and including the lemon zest.
Nut brittle
Bring the sugar and water to the boil in a pan without stirring. Reduce the heat and simmer, swirling the pan occasionally until a light brown caramel has formed. Add the nuts, mix, season with salt, spread on a sheet of baking paper, leave to cool. Coarsely chop the nuts.
To serve
Serve the muesli, top with the chocolate and nuts.
