Mini Amerikaner biscuits
Ingredients
for 40 pieces
| 100 g | butter, soft |
| 80 g | icing sugar |
| 1 | lemon, rinsed with hot water, dabbed dry, use grated zest and 1 tbsp of juice |
| 1 pinch | salt |
| 2 | eggs |
| 250 g | white flour |
| 1 tsp | baking powder |
| 2 tbsp | milk |
| 100 g | icing sugar |
| 1 ½ tbsp | milk |
| some | Smarties |
How it's done
Dough
In a bowl, mix the butter with all the other ingredients up to and including the salt. Add the eggs, beat using the whisk on a mixer until the mixture becomes lighter in colour. Combine the flour and baking powder, add with the milk, mix in.
Shape the biscuits
Transfer the dough to a piping bag with a smooth nozzle (approx. 14 mm in diameter), pipe approx. 40 mounds (each approx. 3 cm in diameter) onto two baking trays lined with baking paper.
Bake
Approx. 10 mins. per tray in the centre of an oven preheated to 180 °C. Remove from the oven, allow to cool slightly, slide onto a cooling rack along with the baking paper, leave to cool completely.
Icing
Combine the icing sugar and milk, spread over the biscuit bases, decorate with Smarties, leave to dry.
