Pumpkin-Pie-Style Chia Pudding
Ingredients
for 4 person
| 2 ½ dl | almond drink |
| 45 g | chia seeds |
| 160 g | pumpkin puree |
| 70 g | coconut milk yoghurt |
| ½ dl | maple syrup |
| ½ tsp | vanilla paste |
| ½ tsp | cinnamon |
| ¼ tsp | ginger powder |
| 1 pinch | nutmeg |
| 1 pinch | ground cloves |
| 1 pinch | gingerbread spice |
| 4 tbsp | coconut milk yoghurt |
| 2 tbsp | pecan nuts, coarsely chopped |
How it's done
Chia pudding
Mix the almond drink and chia seeds in a bowl, cover and chill for at least 30 minutes. Whisk until smooth and until there are no lumps. Stir in the pumpkin puree and all the remaining ingredients, up to and including the gingerbread spice.
To serve
Arrange the chia pudding in bowls and garnish with the coconut milk yoghurt and nuts.
