Carrot curry with jackfruit

Ingredients

for 2 person

Curry
  oil for frying
1 tin jackfruit (approx. 400 g), rinsed, drained
200 g carrots, cut in half lengthways and then into slices
onion, cut into wedges
garlic clove, sliced
2 tbsp Vegan red curry paste
2 ½ dl coconut milk
1 dl water
1 tsp salt
a little  pepper

How it's done

Curry

Heat the oil in a frying pan. Break up the jackfruit with a fork, add, stir-fry for approx. 3 mins., remove and set aside. Heat a dash of oil in the same pan. Add the carrots, onion and garlic, stir fry for approx. 4 mins. Add the curry paste, cook briefly. Pour in the coconut milk and water, bring to the boil. Reduce the heat, add the jackfruit, simmer for approx. 10 mins., season.
