Carrot curry with jackfruit
Ingredients
for 2 person
oil for frying | |
1 tin | jackfruit (approx. 400 g), rinsed, drained |
200 g | carrots, cut in half lengthways and then into slices |
1 | onion, cut into wedges |
1 | garlic clove, sliced |
2 tbsp | Vegan red curry paste |
2 ½ dl | coconut milk |
1 dl | water |
1 tsp | salt |
a little | pepper |
How it's done
Curry
Heat the oil in a frying pan. Break up the jackfruit with a fork, add, stir-fry for approx. 3 mins., remove and set aside. Heat a dash of oil in the same pan. Add the carrots, onion and garlic, stir fry for approx. 4 mins. Add the curry paste, cook briefly. Pour in the coconut milk and water, bring to the boil. Reduce the heat, add the jackfruit, simmer for approx. 10 mins., season.
