Ingredients

for 12 pieces

Batter
160 g butter, soft
160 g sugar
¼ tsp salt
eggs
1 dl water, hot
2 tbsp instant coffee
300 g white flour
2 tsp baking powder
ripe bananas (approx. 200 g), diced
Glaze
2 tbsp water
160 g icing sugar
½ tsp instant coffee

How it's done

Batter

Place the butter, sugar and salt in a bowl, mix using the whisk attachment on a mixer. Beat in the eggs one at a time and continue to beat until the mixture becomes lighter in colour. Combine the water and coffee powder. Mix the flour and baking powder, stir into the egg mixture alternately with the coffee. Add the banana, mix. Transfer the batter to the prepared baking tray.

Bake

For approx. 25 mins. in the centre of an oven preheated to 180 °C. Remove from the oven, allow to cool slightly, leave the muffins to cool completely on a rack.

Glaze

Mix the water, icing sugar and coffee powder, drizzle over the muffins.
