Scrambled eggs
260 g tofu
¼ tsp turmeric
¼ tsp salt (e.g. Kala namak salt)
1 tbsp olive oil
Serve
4 slice wholegrain bread , roasted
100 g vegan cream cheese substitute

How it's done

Scrambled eggs

Place the tofu, turmeric and salt into a bowl, mash with a fork. Heat the oil in a non-stick frying pan. Add the tofu, fry for approx. 4 mins., while stirring.

Serve

Spread the bread with the cream cheese, top with the vegan scrambled eggs.
