Vegan scrambled eggs
Ingredients
for 2 person
260 g | tofu |
¼ tsp | turmeric |
¼ tsp | salt (e.g. Kala namak salt) |
1 tbsp | olive oil |
4 slice | wholegrain bread , roasted |
100 g | vegan cream cheese substitute |
How it's done
Scrambled eggs
Place the tofu, turmeric and salt into a bowl, mash with a fork. Heat the oil in a non-stick frying pan. Add the tofu, fry for approx. 4 mins., while stirring.
Serve
Spread the bread with the cream cheese, top with the vegan scrambled eggs.
