Crispy apple bars

These crispy bars filled with apples are perhaps the best sweet treat for the coming autumn season. They are made of three layers, all with different textures. Between the firm shortcrust pastry base and the crispy topping is a deliciously creamy apple filling. It's an explosion of aromas and flavours – perfect for the chillier days when you look forward to being home and treating yourself. They are best eaten within 48 hours as the moist filling will turn the pastry soft over time. They'll still taste delicious but just a little softer. And they're even better served with a scoop of vanilla ice cream or vanilla custard while still warm.

Ingredients

for 16 pieces

Pastry base
140 g white flour
50 g cane sugar
¼ tsp bourbon vanilla sugar
120 g butter, cut into pieces, cold
Apple filling
500 g apples, peeled, diced
50 g sugar
2 tbsp white flour
Topping
100 g white flour
100 g cane sugar
30 g rolled oats
1 tsp cinnamon
1 pinch salt
90 g butter, cut into pieces, cold

How it's done

Pastry base

Mix the flour, sugar and vanilla sugar in a bowl. Add the butter and rub together using your hands to form an even, crumbly mixture. Transfer the mixture to the prepared tin and press down.

To bake

Approx. 15 mins. in the centre of an oven preheated to 175°C. Remove, allow to cool slightly.

Apple filling

Mix the apples with the sugar and flour, spread over the pastry base.

Topping

In a bowl, mix the flour, sugar, oats, cinnamon, salt and butter with a fork to form a crumbly mixture, spread on top of the apple filling.

To bake

Approx. 45 mins. in the centre of an oven preheated to 175°C. Remove and leave to cool in the tin. Remove carefully from the tin and cut into bars.
