Peanut and lime tiramisu
Ingredients
for 6 person
| 4 | organic limes, grated zest set aside, all of the juice |
| 2 dl | water |
| 2 tbsp | icing sugar |
| 250 g | ricotta |
| 150 g | plain greek yoghurt |
| 100 g | peanut butter |
| 3 tbsp | icing sugar |
| 2 ½ dl | single cream, beaten until light and frothy |
| 200 g | sponge fingers |
| 10 g | chocolate shavings |
| 30 g | salted, roasted peanuts |
How it's done
Lime juice
Whisk together the lime juice, water and sugar, set aside.
Peanut creme
Combine the ricotta, yoghurt, peanut butter and sugar in a bowl. Using a rubber spatula, carefully fold in the cream.
Tiramisu
Place half of the sponge fingers (sugar side down) in the dish. Pour half of the lime juice over the top, cover with half of the peanut creme, repeat the process with the remainder of the sponge fingers, lime juice and peanut creme. Top the tiramisu with the chocolate shavings, peanuts and reserved lime zest, cover and chill for approx. 2 hrs.
