Peanut and lime tiramisu

Ingredients

for 6 person

Lime juice
organic limes, grated zest set aside, all of the juice
2 dl water
2 tbsp icing sugar
Peanut creme
250 g ricotta
150 g plain greek yoghurt
100 g peanut butter
3 tbsp icing sugar
2 ½ dl single cream, beaten until light and frothy
Tiramisu
200 g sponge fingers
10 g chocolate shavings
30 g salted, roasted peanuts

How it's done

Lime juice

Whisk together the lime juice, water and sugar, set aside.

Peanut creme

Combine the ricotta, yoghurt, peanut butter and sugar in a bowl. Using a rubber spatula, carefully fold in the cream.

Tiramisu

Place half of the sponge fingers (sugar side down) in the dish. Pour half of the lime juice over the top, cover with half of the peanut creme, repeat the process with the remainder of the sponge fingers, lime juice and peanut creme. Top the tiramisu with the chocolate shavings, peanuts and reserved lime zest, cover and chill for approx. 2 hrs.
