Prawn and horseradish wrap

Summer wouldn't be summer without a picnic! For me, it's one of the best things about the warmer months. Eating outside – no matter where! A wrap like this one is perfect for a picnic basket. But it's also a great idea for lunch at the office.

Ingredients

for 4 person

To fill the wraps
200 g cream cheese
2 tbsp grated horseradish in a jar
wheat tortillas
baby lettuce, cut into strips
avocado, in slices
400 g shelled, cooked prawn tails, coarsely chopped
organic lemon, use grated zest
  salt and pepper to taste

How it's done

To fill the wraps

Mix the cream cheese with the horseradish, spread over the tortillas. Add the lettuce, avocado, prawns and lemon zest, season, roll up the tortillas.

To fry the wraps

Fry the wraps in a non-stick frying pan for approx. 2 mins. on each side until golden brown. Cut the wraps in half crosswise.
