Vegan chicken chunks pita
Ingredients
for 4 pieces
| 300 g | carrots *-* |
| 2 tsp | olive oil |
| 1 tsp | apple vinegar |
| ¼ tsp | salt |
| 4 | pita breads |
| 1 tbsp | peanut oil |
| 180 g | vegan chicken chunks |
| ¼ tsp | smoked paprika |
| ¼ tsp | salt |
| a little | pepper |
| 60 g | lambs' lettuce |
| 175 g | hummus (e.g. Karma harissa) |
How it's done
Carrots
Place the carrots, oil, vinegar and salt in a bowl, mix well, leave to absorb for approx. 30 mins.
Pitas
Prepare the pitas according to the packet instructions. Heat the oil in a non-stick frying pan, fry the chicken chunks for approx. 5 mins., season. Cut open the pitas but do not slice all the way through. Fill the pitas with the lamb's lettuce, hummus, chicken chunks and carrot.
