Vegan Graubünden sandwich

Ingredients

for 8 pieces

Apple chutney
1 tbsp sunflower oil
shallot, finely chopped
red-skinned apple, cut into cubes
2 tbsp water
1 tsp sugar
½ tbsp apple vinegar
¼ tsp salt
a little  pepper
Sandwich
nut bread, cut into 16 slices, toasted
40 g vegan butter substitute
100 g radicchio, cut into strips
120 g vegan dried meat, sliced
100 g vegan cheese, in slices
½ bunch chives, finely chopped

How it's done

Apple chutney

Heat the oil in a pan. Add the shallot and apple, sauté for approx. 2 mins. Add the water, cover and sauté over a medium heat for approx. 10 mins. Mix in the sugar and vinegar, season.

Sandwich

Spread the vegan butter on the bread. Top half of the slices of bread with the radicchio, vegan dried meat, vegan cheese and apple chutney. Sprinkle with chives, cover with the remaining slices of bread.
