Vegan Graubünden sandwich
Ingredients
for 8 pieces
1 tbsp | sunflower oil |
1 | shallot, finely chopped |
1 | red-skinned apple, cut into cubes |
2 tbsp | water |
1 tsp | sugar |
½ tbsp | apple vinegar |
¼ tsp | salt |
a little | pepper |
1 | nut bread, cut into 16 slices, toasted |
40 g | vegan butter substitute |
100 g | radicchio, cut into strips |
120 g | vegan dried meat, sliced |
100 g | vegan cheese, in slices |
½ bunch | chives, finely chopped |
How it's done
Apple chutney
Heat the oil in a pan. Add the shallot and apple, sauté for approx. 2 mins. Add the water, cover and sauté over a medium heat for approx. 10 mins. Mix in the sugar and vinegar, season.
Sandwich
Spread the vegan butter on the bread. Top half of the slices of bread with the radicchio, vegan dried meat, vegan cheese and apple chutney. Sprinkle with chives, cover with the remaining slices of bread.
