Lamb's lettuce with baked apple rings
Ingredients
for 4 person
| 1 dl | water |
| ½ dl | lemon juice |
| 1 tbsp | liquid honey |
| 2 | red-skinned apples, cut into approx. 5 mm rings |
| ½ | cinnamon stick |
| 4 sprig | thyme, leaves torn off |
| ½ tbsp | mustard |
| 1 tbsp | white balsamic vinegar |
| 2 tbsp | olive oil |
| salt and pepper to taste |
| a little | sea salt |
| 150 g | lambs' lettuce |
| 40 g | pine nuts, roasted |
How it's done
Apples
Mix the water, lemon juice and honey in the dish. Add the apples, cinnamon and thyme, mix.
To bake
Approx. 15 mins. in the centre of an oven preheated to 200 °C. Remove, allow the apple rings to cool slightly. Remove the cinnamon stick, pour the liquid into a bowl (yields approx. ½ dl).
Salad dressing
Add the mustard, balsamic and oil to the liquid, whisk together, season the dressing.
To serve
Plate up the apple rings. Sprinkle with fleur de sel. Add the lamb's lettuce to the dressing, mix, plate up next to the apples, sprinkle with the pine nuts.
