Grapefruit Gin Sour
Ingredients
for 1 glass
| 1 dl | grapefruit juice |
| 20 g | sugar |
| 1 sprig | thyme |
| 2 ½ cl | gin |
| 1 | fresh egg white |
| some | ice cubes |
| 1 slice | grapefruit, quartered |
| 1 sprig | thyme |
How it's done
Grapefruit syrup
Place the grapefruit juice, sugar and thyme in a pan, bring to the boil, reduce to a syrup for approx. 5 mins. (yields approx. 3 tbsp) . Leave the syrup to cool, remove the thyme.
Cocktail
Place the gin and egg white in the shaker along with the syrup, top up with ice cubes, shake well for approx. 30 secs. Pour the cocktail through a sieve into the glass.
To serve
Decorate the cocktail with grapefruit and thyme.
