Millet bowl
Ingredients
for 4 person
250 g | yellow millet |
6 dl | salted water, boiling |
1 | lime, the whole juice |
4 tbsp | olive oil |
1 glass | dried tomatoes in oil, drained, finely chopped |
1 | bell pepper, finely chopped |
150 g | feta, finely crumbled |
80 g | shelled pistachios, finely chopped |
1 bunch | flat-leaf parsley, finely chopped |
salt and pepper to taste |
How it's done
Millet
Cover and cook the millet in boiling salted water for approx. 15 mins. Remove the pan from the heat, cover and leave to absorb for approx. 5 mins. Separate the millet with a fork, leave to cool.
Bowls
Whisk the lime juice and oil in a bowl. Add the millet, tomatoes, pepper, feta, pistachios and parsley, mix, season and serve in bowls.
