Matcha dates

Many of you are perhaps already familiar with dates stuffed with peanut butter and dipped in dark chocolate. This summer version with matcha and white chocolate is inspired by my love for iced matcha lattes in summer. These sweet dates are stuffed with cashew butter and come with a topping of chopped, salted macadamia nuts, giving them a truly unique appeal.

Ingredients

for 16 pieces

16  Medjool dates, pitted
100 g cashew cream
100 g white chocolate, finely chopped
1 tbsp matcha powder
20 g salted macadamia nuts, finely chopped

How it's done

Stuff the dates with the cashew butter. Place the chocolate in a thin-sided bowl and suspend over a gently simmering bain-marie, ensuring that the bowl does not touch the water. Melt the chocolate, add the matcha, stir until smooth. Dip the dates in the chocolate, allow the excess to drip off, place on a plate covered with baking paper. Sprinkle with the macadamia nuts, chill for approx. 30 mins.
