Oysters with wasabi & sesame crackers
Ingredients
for 2 person
30 g | wholemeal spelt flour |
30 g | spelt flour |
1 tbsp | sesame seeds |
1 tbsp | black sesame seeds |
2 tsp | wasabi paste |
¼ tsp | sea salt |
3 tbsp | water |
a little | spelt flour |
2 tbsp | soy sauce |
1 tbsp | lime juice |
1 tsp | sesame oil |
4 piece | Fine Food Marennes oysters |
100 g | cucumbers, cut into cubes |
1 cm | ginger, finely grated |
1 | red chilli, deseeded, finely chopped |
How it's done
Crackers
In a bowl, mix the flour with all the other ingredients up to and including the salt. Add the water, mix quickly to form a soft dough, cover and leave to rest at room temperature for approx. 30 mins.
Shape
On a lightly floured surface, roll out the dough very thinly, place on a baking tray lined with baking paper.
Bake
Approx. 12 mins. in the centre of an oven preheated to 200 °C. Remove, leave the crackers to cool on the tray.
Dressing
Combine the soy sauce, lime juice and sesame oil.
Oysters
Open the oysters as per the instructions, serve on ice, drizzle with the dressing. Mix the diced cucumber, ginger and chilli, sprinkle on top. Break the crackers into pieces, serve with the oysters.
