Potato dumplings with red cabbage
Ingredients
for 4 person
| 1 tbsp | olive oil |
| 1 | red onion, finely chopped |
| 85 g | wild boar Salsiz, cut into cubes |
| 200 g | red cabbage, very thinly sliced |
| 2 sprig | sage, finely chopped |
| 3 tbsp | balsamic vinegar |
| 2 tbsp | water |
| 1 pinch | nutmeg |
| ¼ tsp | salt |
| a little | pepper |
| 100 g | cooked chestnuts (soft) |
| 1 tbsp | clarified butter |
| 500 g | potato dumplings |
| ¼ tsp | salt |
| a little | pepper |
How it's done
Red cabbage
Heat the oil in a pan. Add the onions and Salsiz sausage, sauté for approx. 5 mins. Add the cabbage and sage, cook for approx. 5 mins. Add the balsamic, reduce completely. Pour in the water, season, cover and simmer for approx. 20 mins. Add the chestnuts, heat through.
Potato dumplings
Heat the clarified butter in a non-stick frying pan. Fry the potato dumplings for approx. 5 mins. until golden brown, season, plate up with the red cabbage.
