Apple and leek salad with char

Ingredients

for 4 person

Dressing
3 tbsp rice vinegar
3 tbsp sesame oil
2 tbsp soy sauce
1 tsp chilli flakes
Leek
1 tbsp sesame oil
400 g leek, cut into thin slices
¾ tsp salt
a little  pepper
green apples deseeded, cut into thin strips
Fish
char fillet with skin (each approx. 150 g)
2 tbsp sesame oil
¼ tsp salt
2 tbsp sesame seeds
2 tbsp black sesame seeds
organic lime, cut into wedges

How it's done

Dressing

Mix the vinegar, oil, soy sauce and chilli flakes in a bowl.

Leek

Heat the oil in a pan. Add the leek, season, cover and cook for approx. 15 mins., stirring occasionally. Add the leek and apples to the dressing, mix.

Fish

Brush the fish fillets with 1 tbsp of oil, season with salt. Mix the sesame, spread over the meat side of the fish, press down gently. Heat the remainder of the oil in a non-stick frying pan. Fry the fish fillets for approx. 2 mins. on each side, plate up with the apple and leek salad. Serve with the lime wedges.
