Apple and leek salad with char
Ingredients
for 4 person
| 3 tbsp | rice vinegar |
| 3 tbsp | sesame oil |
| 2 tbsp | soy sauce |
| 1 tsp | chilli flakes |
| 1 tbsp | sesame oil |
| 400 g | leek, cut into thin slices |
| ¾ tsp | salt |
| a little | pepper |
| 2 | green apples deseeded, cut into thin strips |
| 4 | char fillet with skin (each approx. 150 g) |
| 2 tbsp | sesame oil |
| ¼ tsp | salt |
| 2 tbsp | sesame seeds |
| 2 tbsp | black sesame seeds |
| 1 | organic lime, cut into wedges |
How it's done
Dressing
Mix the vinegar, oil, soy sauce and chilli flakes in a bowl.
Leek
Heat the oil in a pan. Add the leek, season, cover and cook for approx. 15 mins., stirring occasionally. Add the leek and apples to the dressing, mix.
Fish
Brush the fish fillets with 1 tbsp of oil, season with salt. Mix the sesame, spread over the meat side of the fish, press down gently. Heat the remainder of the oil in a non-stick frying pan. Fry the fish fillets for approx. 2 mins. on each side, plate up with the apple and leek salad. Serve with the lime wedges.
