Ingredients

for 4 portions

Marinade
3 tbsp soy sauce
garlic cloves, finely chopped
2 cm ginger, finely grated
red chilli, finely chopped
chicken breasts, cut lengthways into approx. 3 cm strips
Peanut sauce
100 g peanut butter
40 g salted peanuts, finely chopped
2 tbsp water
1 tbsp soy sauce
organic lime, use a little grated zest and all of the juice
Chicken
12  short wooden skewers
  oil for frying

How it's done

Marinade

Mix the soy sauce, garlic, ginger and chilli in a bowl. Add the chicken, mix, cover and leave to marinate in the fridge for approx. 30 mins.

Peanut sauce

Combine the peanut butter with all the ingredients up to and including the lime juice.

Chicken

Thread the strips of chicken onto the wooden skewers in a wave pattern. Heat the oil in a non-stick frying pan. Fry the chicken skewers in batches for approx. 5 mins. on each side until golden brown. Remove, keep warm, serve with the peanut sauce.
