Chicken satay
Ingredients
for 4 portions
3 tbsp | soy sauce |
2 | garlic cloves, finely chopped |
2 cm | ginger, finely grated |
1 | red chilli, finely chopped |
4 | chicken breasts, cut lengthways into approx. 3 cm strips |
100 g | peanut butter |
40 g | salted peanuts, finely chopped |
2 tbsp | water |
1 tbsp | soy sauce |
1 | organic lime, use a little grated zest and all of the juice |
12 | short wooden skewers |
oil for frying |
How it's done
Marinade
Mix the soy sauce, garlic, ginger and chilli in a bowl. Add the chicken, mix, cover and leave to marinate in the fridge for approx. 30 mins.
Peanut sauce
Combine the peanut butter with all the ingredients up to and including the lime juice.
Chicken
Thread the strips of chicken onto the wooden skewers in a wave pattern. Heat the oil in a non-stick frying pan. Fry the chicken skewers in batches for approx. 5 mins. on each side until golden brown. Remove, keep warm, serve with the peanut sauce.
