Cosmopolitan popcorn
Ingredients
for 300 g
1 tbsp | peanut oil |
150 g | popcorn |
120 g | sugar |
1 | organic orange xxx |
3 tbsp | vodka |
2 tbsp | orange liqueur (e.g. Cointreau) |
20 g | butter |
½ tsp | sodium bicarbonate |
¼ tsp | salt |
50 g | cranberries, finely chopped |
3 tbsp | lemon zest grated, dried |
How it's done
Popcorn
Heat the oil in a wide pan. Add the corn kernels, cover immediately and leave to pop over a medium heat for approx. 6 mins. Place the popcorn in a bowl, set aside.
Orange caramel
Bring the sugar and orange juice to the boil without stirring. Reduce the heat and simmer, swirling the pan occasionally until a light brown caramel has formed. Add the vodka and orange liqueur, reduce almost completely. Add the orange zest, butter, baking soda and salt, mix. Add the popcorn to the caramel, mix well with a wooden spoon until all of the popcorn is coated in the caramel. Add the cranberries and lemon zest, mix. Spread the popcorn on a baking tray lined with baking paper, leave to cool.
