Vegan chocolate frozen yoghurt

For this chocolate frozen yoghurt recipe you'll only need 5 ingredients. You don't need an ice cream maker and the frozen yoghurt is ready to eat as soon as it has been mixed. If you would prefer a healthier version, you can replace the icing sugar with 2 Medjool dates and use sugar-free chocolate. Either way, this chocolate frozen yoghurt tastes utterly divine!

Ingredients

400 g Skyr Style plain, vegan
Frozen yoghurt
100 g cashew nuts
120 g vegan dark chocolate, finely chopped
30 g cocoa powder
4 tbsp icing sugar

To prepare

Pour the Skyr Style yoghurt into ice cube moulds, freeze for approx. 6 hrs.

Frozen yoghurt

Soak the nuts in warm water for approx. 30 mins., drain well. Place the chocolate in a thin-sided bowl and suspend over a gently simmering bain-marie, ensuring that the bowl does not touch the water. Melt the chocolate, stir until smooth and leave to cool. Remove the Skyr Style yoghurt cubes from the moulds, place in a blender with the nuts, chocolate, cocoa powder and icing sugar, puree until smooth. Plate up and serve the frozen yoghurt straight away.
