Cucumber & gooseberry salad

Ingredients

for 4 person

Dressing
2 tbsp coarse-grain mustard
3 tbsp white wine vinegar
3 tbsp olive oil with lemon (e.g. Fine Food olive oil with lemon)
2 tbsp water
¾ tsp salt
a little  pepper
Salad
cucumber, cut lengthwise into slices approx. 2 mm thick
500 g Galia melons, cut into approx. 2 cm pieces
200 g gooseberries
150 g blueberries
To serve
160 g soft goats' cheese
2 tbsp liquid blossom honey
80 g Fine Food Wasabi Pistachios, coarsely chopped

How it's done

Dressing

Whisk the mustard, vinegar, oil and water in a bowl, season.

Salad

Add the cucumber, melon and berries to the dressing, mix carefully.

To serve

Plate up the cucumber salad with the cheese. Drizzle with the honey, sprinkle the nuts on top.
