Cucumber & gooseberry salad
Ingredients
for 4 person
2 tbsp | coarse-grain mustard |
3 tbsp | white wine vinegar |
3 tbsp | olive oil with lemon (e.g. Fine Food olive oil with lemon) |
2 tbsp | water |
¾ tsp | salt |
a little | pepper |
1 | cucumber, cut lengthwise into slices approx. 2 mm thick |
500 g | Galia melons, cut into approx. 2 cm pieces |
200 g | gooseberries |
150 g | blueberries |
160 g | soft goats' cheese |
2 tbsp | liquid blossom honey |
80 g | Fine Food Wasabi Pistachios, coarsely chopped |
How it's done
Dressing
Whisk the mustard, vinegar, oil and water in a bowl, season.
Salad
Add the cucumber, melon and berries to the dressing, mix carefully.
To serve
Plate up the cucumber salad with the cheese. Drizzle with the honey, sprinkle the nuts on top.
